Yield: 6 servings | Serving Size: 1/6 of recipe
Ingredients
1/3 cup olive oil
1/4 cup red wine vinegar
1 tsp Splenda or sugar
1 tsp Dijon mustard
1 tsp minced garlic
1 bag (10 oz mixed baby greens or spinach)
1 cup strawberries, sliced
1/2 cup crumbled blue or feta cheese
1/3 cup chopped walnuts
Directions
1. In a small bowl, beat vinaigrette ingredients with wire whisk until smooth.
2. Add salad ingredients to a large bowl. Pour vinaigrette dressing over salad ingredients and toss lightly until equally coated.
Recipe Notes
Could substitute apples or different berries you have on hand. Keep dressing separate from salad until ready to be served.
